italians are worth the wait


Well although I did not post the recipe of the week yesterday, it was definately worth the wait. In honor of Becca, I am making lasagne. This is a great meal to feed a lot of people very easily. My lasagne is very special and delicious, much better than the frozen one.

Ingredients Needed:

Lasagne noodles
Large can of tomatoes
Tomato paste
Garlic cloves
Onions
Butter
Fresh Basil
Oregano
Salt
Eggs
2 containers of ricotta cheese
2 bags of motzerella cheese
Container of parmesean cheese (fresh kind)
Ground beef
Italian sausage (spicy or sweet, either kind you like)
Bread Crumbs

Preheat oven to 400 degrees.

Boil the lasagne noodles.

For the sauce:
Mince garlic and cut onions very fine. Sautee them in a pan with a couple tablespoons of butter. While it is sautee'ing, put the can of tomatoes in the blender or food processor and blend them completely. Add the tomatoes and small can of tomato paste to the garlic and onion. Stir and let sit for a little while. Add salt, and add some oregano. Chop the leaves of the fresh basil very small and add that. Let it simmer on low heat while you cook the meat.

For the meat:
Cook ground beef and italian sausage together in a pan with a little olive oil in the bottom. Drain the excess fat off and add to the pot of sauce and let that simmer for about 5-10 minutes.

Ricotta cheese when it comes out of the container doesnt have a lot of flavor. Each container needs to be mixed with 1 egg, so you can just put 2 containers in a bowl with 2 eggs. Add some salt, oregano, and the minced fresh basil.

Use a large pyrex baking dish. Layer the noodles, sauce, 1/2 the ricotta mixture, 1 bag motzerella, and then 1/2 container of parmesean cheese. Make another layer of the same. Add bread crumbs to the top, and put 5-6 small pats of butter on top.

Bake at 400 degrees for about 45 minutes until bubbly on top! Enjoy!

i'll eat anything wrapped in bacon


Todays recipe is my husband's favorite. The truth of the matter is you could burn something to a crisp, then wrap it in bacon and it would be delicious. I don't believe anyone who says they don't like bacon, they have just lied to themselves. This recipe is a new take on traditional chicken cordon-blue, and it is so easy!

Ingredients:
Boneless, skinless chicken breast
Bacon
Spinach
Blue Cheese
Sweet Potatoes

You need a chicken breast per person. Take a knife and make a hole in the top, thick part of the chicken. Use your finger to enlarge the hole and make a pocket the length of the chicken so you can stuff it with the yummy ingredients!
Chop up the spinach (I remove the stems), and just stuff a little spinach and then a little blue cheese and repeat into the hole you just made. Get as much in as you can.
Use toothpicks to wrap the chicken breast in bacon, I use 2 pieces of bacon per piece of chicken.
Bake in the oven at 350 for about 20 minutes, just make sure the chicken is done but not dried out, some ovens cook things faster, some slower.
I usually serve this with sweet potato fries. Cut the sweet potatoes in half lengthwise and then in half again. Then cut into long fries, the thinner they are the faster they cook. Drizzle olive oil and salt and pepper over them and make sure they are all coated well (this dish gets your hands dirty!). Bake these for about 30-45 minutes at 350 (depending on the thickness), till really crispy. This is so yummy and easy! Yall will LOVE it. Emmett does (and we all know how picky he is :)

some celebrities eat chips


If you are a girl and are not in the habit of obsessively checking www.theskinnywebsite.com, you are really missing out. This website is awesome because it shows pictures of celebrities eating chips and cookies and getting fat. There is just something reassuring about seeing Heidi Klums cellulite or Britney Spears fat ass. I hate seeing all those pictures of the stars in VOGUE and SHAPE, etc because they are airbrushed like crazy. It is nice to see them woofing down pizza with a little bit of armfat, makes me feel better anyway. (This one was for you Rianne, I mean they dont even want chips, right?)
